Went for a French Style Gateaux course at the Savour School in Melbourne. Enjoyed every minute of it.
Made 4 different types of cakes over the course of 14 hours. I'll post them all up separately. For today, I'll show you Monte Cristo.

Garnishes - white chocolate hearts, white chocolate lace tubes.
Layering and filling - it was an almond sponge cake filled with apple, with raspberry mousse and mint creme.
